Grain & Sugar-Free Blueberry Muffins Recipe

Bake soft, delicious blueberry muffins that are grain-free, sugar-free, and GAPS-friendly! Perfect for Paleo breakfasts and healthy snacks.

Equipment

Ingredients
  

  • 1 cup coconut flour
  • 2/3 cup butter (pastured - or coconut oil)
  • 1/3 cup honey
  • 8 pcs eggs (pastured)
  • 1-2 cups blueberries (fresh or frozen)

Instructions
 

  • Combine eggs, softened butter (or melted coconut oil) and honey in mixing bowl or blender and blend until smooth.

  • Fold in coconut flour, making sure to not over mix.
  • Add in blueberries and mix until incorporated.
  • On a greased non-toxic baking sheet (or on parchment paper), form into 1 inch balls and lightly press down.

  • Bake for about 20 minutes or until golden brown at 350 degrees.
  • OPTIONAL: Enjoy with a pat of butter on top!
