These healthy gluten and sugar free granola bars are soft, chewy, and chocolatey. This easy to make recipe comes together in less than 30 minutes and is a quick and healthy breakfast or dessert idea.
- 5 cups quick or old fashioned oats use gluten free, if desired
- 16 ounces peanut butter I use natural with no sugar or seed oils added
- 1 cup honey or real maple syrup
- 1/2 cup butter or preferred fat/oil, such as coconut oil
- 3 eggs
- 1.5 cups chocolate chips or favorite mix ins
- 1 tbsp real vanilla extract
Melt together peanut butter, honey, and butter (or coconut oil for dairy free option) until mixed together. Do not overheat.
Remove from heat and mix in eggs and vanilla, then oats.
Fold in chocolate chips (or other preferred mix ins, such as raisins, nuts)
Pour granola batter into a greased or parchment paper lined 9x13 pan and bake until just golden brown, about 10-15 minutes. Do not overbake!
Remove from oven and allow pan to cool before cutting, or the granola will not hold its shape.
Store covered at room temperature for 2-3 days or in the fridge for 1 week.
