Healthy Marshmallow Recipe (GAPS, Paleo, Vegan, Sugar-Free) Recipe

Make soft, fluffy, and healthy marshmallows at home! This GAPS-friendly, Paleo, vegan, and sugar-free recipe is perfect for clean, gut-friendly treats.

  • 9x13 pan
  • unbleached parchment paper
  • stand mixer

  • Add 1/2 cup of water, honey, and salt in a pot on medium heat. Slowly bring the mixture to a boil, stirring constantly. Once it boils and begins to foam, stir for about 5-10 minutes, until it the mixture looks a little thicker and grainy. Remove from heat immediately after texture change and allow to cool for 5 minutes.
  • Add 1/2 cup warm water and gelatin to the stand mixer bowl and mix on low/medium.
  • Slowly (over 3-4 minutes, so gelatin does not get too hot) pour in the honey mixture to the stand mixer bowl.
  • When all the honey is added, turn the mixer on high.
  • Continuously scrape the sides of the mixing bowl with a spatula while mixing on high speed.
  • Mix until the batter changes consistency. It should double in volume and begin to form "peaks". This means when you lift the dripping spatula, the batter will look like a mountain peak, "standing up". This may take about 6-12 minutes depending on your mixer.
  • Quickly pour batter into parchment paper lined 9x13 pans and smooth the top immediately.
  • Allow the marshmallows to set in the fridge for about 1-2 hours or at room temperature for about 6 hours.
  • Cut into desired sizes, once set.
