Equipment

  • mixing bowl
  • 8x8 freezer safe pan

Ingredients

Bottom peanut butter layer

Top chocolate layer

Instructions

Bottom peanut butter layer:

  • In a mixing bowl, mix peanut butter and honey (or maple syrup).
  • Add coconut flour and mix.
  • Spread peanut butter layer into an 8x8 freezer safe pan.

Top chocolate layer:

  • Melt chocolate chips and coconut oil on stove top in a pan or in a glass bowl in the microwave.
  • Pour and spread chocolate mixture evenly over the peanut butter layer.

Then...

  • Sprinkle with course sea salt (optional).
  • Allow peanut butter and chocolate to cool and harden. Put in the fridge or freezer to speed this process.
  • When chocolate layer is hardened, cut into squares and serve.
  • Store in the refrigerator for up to 2 weeks or up to 3 months in the freezer.

Notes

    • We often make homemade chocolate, as it is sometimes simpler and easier to make (and healthier). Use this simple 3 ingredient homemade chocolate recipe in place of chocolate chips, if desired.
    • These bars freeze and thaw well, making them a great addition to your freezer meal plan!
    • The coconut oil helps harden the chocolate in this recipe. If you do not like coconut, you can use another neutral flavored fat or butter.
