Savory Protein Snack - Gluten-Free, GAPS, Low Carb Recipe

Fuel your day with this delicious savory protein snack—a low-carb, high-protein recipe that’s gluten-free, GAPS-friendly, and perfect for clean eating!

Equipment

  • freezer and oven safe 9x13 pan

Ingredients
  

  • 4 cups cauliflower rice (pre-riced from store or finely chopped fresh heads)
  • 1 pc medium sized block of cheese (use a hard cheese for GAPS).
  • 5 pcs eggs
  • 1 pack nitrite free pepperoni, sausage, or other meat (optional)
  • 4 tbsp avocado oil, butter, lard, or other animal fat choice
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp parsley
  • 1 tbsp sea salt (or to taste)

Instructions
 

  • Use 2 tablespoons avocado oil or animal fat to grease 9x13 pan.
  • Add riced/finely chopped cauliflower to 9x13 pan and bake at 375 degrees.
  • As moisture begins to evaporate, stir in remaining 2 tablespoons of oil or animal fat to the cauliflower.
  • Bake cauliflower, stirring occasionally, until moisture has evaporated and cauliflower is becoming browned and crisp.
  • Stir in sea salt and seasonings and 5 scrambled eggs into the riced cauliflower. Bake for 5 minutes or until eggs are cooked through and the bottom is beginning to crisp/brown.
  • Remove pan from oven and add cheese slices, pepperoni, or other desired meat. Bake until cheese is melted and remove from oven.

Notes

  • If using frozen riced cauliflower, allow longer bake time to brown the cauliflower and allow moisture to evaporate compared to fresh cauliflower.
  • This base recipe can be made into a variety of different meals or snacks! Simply use different seasonings, such as Italian, Mexican, or Asian in the base layer. Experiment with different cheeses, meats, or veggies to find your family's favorites.
