A delicious, gut healthier cookie is a reason to celebrate. This healthy skillet monster cookie is gooey, soft, and a perfect chocolatey dessert. Using only honey for the sweetener, this gluten free treat comes together using just one pan to mix and bake- no extra dishes. Finding a one-dish, sugar-free, gluten free cookie the whole family loves is one of the best kinds of mom wins around here.

This cookie recipe opens the gates to many other cookie variations, swapping out different nut butters, mix-ins, and/or preferred fats/oils, to fit your culinary and dietary preferences. How To Make a Healthy Skillet Monster Cookie

  • In a cast iron skillet, mix together peanut butter, honey, and butter (or coconut oil for dairy-free option). If you are working with raw honey and natural peanut butter, heat the skillet on low heat to help soften and mix all ingredients together.
  • Remove cast iron from heat and mix in eggs and vanilla.
  • Add oats and mix until full incorporated, then mix in chocolate chips.
  • Smooth batter flat in cast iron pan.
  • Press in MnMs, if using
  • Bake batter in the cast iron pan at 350 degrees until golden brown, about 15-20 minutes.
  • Allow cookie to cool to room temperature before removing from pan so the cookie holds its form.
  • Cut into desired shapes (wedges, bars, etc.) and serve when cooled.
