Mango Cilantro Salsa – Paleo, Whole30, GAPS

This refreshing, tangy mango cilantro salsa is the perfect blend of sweet and spicy. Fresh fruit, herbs, and veggies makes for a delicious, healthy, and easy to make snack or side dish. Enjoy with chips, over grilled meat or baked fish, on top of salad greens, with fish tacos, over scrambled eggs, or with a bowl and spoon. From cutting board to table in less than 10 minutes!

What to Eat Mango Cilantro Salsa With
This mango cilantro salsa is one of those repeat recipes we enjoy in a variety of forms. A few ways our family enjoys eating this recipe are:
- Chips and salsa
- Over grilled chicken or steak
- Topped on baked fish
- Fish tacos
- Over salad greens
- With plain yogurt and honey drizzle
- On top of scrambled eggs
- Paired with shrimp or other seafood
- Eating plain with a spoon for dessert or a side dish

Mango Cilantro Salsa Recipe

Ingredients
- 2 cups mango (about 2-3 fresh chopped mangos)
- 1/2 cup sweet peppers (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup green onion (finely chopped – scallions or sweet red onion)
- 1–2 tbsp jalapeño pepper (finely chopped – remove seeds for less spice)
- 1 lime (juice)
- 1/4 tsp salt (or, to taste!)

- In a mixing bowl, combine mango, peppers, onion, and jalapeños.
- Gently toss ingredients until mixed.
- Add the lime juice, salt, and cilantro and mix until all ingredients are incorporated.
- Serve immediately or place in the refrigerator until ready to serve.

- This mango cilantro salsa is best served right away. If you want to make ahead, layer the mangos on the bottom of the mixing bowl and place the other ingredients on top. Do not mix until ready to serve. (The mangos will begin to soften and release juices over time once chopped.)
- This recipe tastes amazing with fresh peaches! You can substitute all or some of the mango with peaches for variety or to enjoy in season fruit.
- Add fresh avocado for a healthy fat add in and deliciousness.
- Store leftovers in the fridge for up to 3 days.

Use this recipe as a base inspiration, but feel free to add or modify ingredients to what is in season or what your family likes to eat. A few recipe variation inspirations could be:
- Add peaches, strawberries, or watermelon in addition to or instead of mango
- Fresh garden chives or scallions in place of sweet red onion
- Add in black pepper or extra jalapeños for a spicier version
