GAPS Diet Egg Salad (Whole30, Keto, Paleo Friendly) Recipe

Creamy GAPS diet egg salad—easy, Whole30, keto, and Paleo-friendly! A quick, gut-healthy, protein-rich meal for any time of day.

Ingredients

hard boiled eggs
(peeled)

cup
homemade or store bought mayo
(use more if needed to reach desired consistency)

yellow mustard

sweet onion
(finely chopped)

stalks
celery
(finely chopped)

cup
chopped veggies (cucumber, cabbage, or sauerkraut, with juice drained)
1-2
tbsp
milk kefir
(optional)

garlic powder
(optional)

tbsp
fresh cilantro, dill, or parsley
(optional)
Instructions
Remove egg whites from yolks and finely chop egg whites.
Mix egg yolks, mustard, mayo, herbs, and milk kefir (optional) together.
Combine chopped veggies and egg whites into the mayo mixture
.
Serve by the spoonful, over salads, in a lettuce wrap, or any other desired way.
Notes
If you are making your mayo from scratch (

. Otherwise, use this
store bought mayo
