GAPS Diet Egg Salad (Whole30, Keto, Paleo Friendly) Recipe

Creamy GAPS diet egg salad—easy, Whole30, keto, and Paleo-friendly! A quick, gut-healthy, protein-rich meal for any time of day.

Equipment

  • Mason jar
  • immersion blender
  • pyrex bowl

Ingredients
  

  • 12 pcs hard boiled eggs (peeled)
  • 1/2 cup homemade or store bought mayo (use more if needed to reach desired consistency)
  • 1 tbsp yellow mustard
  • 1 pcs sweet onion (finely chopped)
  • 2-4 stalks celery (finely chopped)
  • 1 cup chopped veggies (cucumber, cabbage, or sauerkraut, with juice drained)
  • 1-2 tbsp milk kefir (optional)
  • 2 tspn garlic powder (optional)
  • 1 tbsp fresh cilantro, dill, or parsley (optional)

Instructions
 

  • Remove egg whites from yolks and finely chop egg whites.

  • Mix egg yolks, mustard, mayo, herbs, and milk kefir (optional) together.

  • Combine chopped veggies and egg whites into the mayo mixture.
  • Serve by the spoonful, over salads, in a lettuce wrap, or any other desired way.

Notes

If you are making your mayo from scratch (here are the directions), you will need a mason jar and an immersion blender. Otherwise, use this store bought mayo, which has clean and healthy ingredients.
