GAPS Diet Egg Salad (Whole30, Keto, Paleo Friendly)

This versatile GAPS egg salad recipe can be enjoyed by the spoonful, in lettuce wraps, as a hearty dip with veggie sticks, or dolloped on a cabbage salad. I love simplifying meal planning by scaling recipes for fast lunches and snacks throughout the week, or to freeze for later use. Our whole family (even picky eaters!) enjoys this recipe, and I feel good about serving this as a protein-packed meal or snack.

Why Make GAPS Diet Egg Salad?

Sometimes I still have a craving for particular foods, even though I have since learned they contain toxic ingredients. One of these is egg salad, which traditionally contains sugar, corn syrup, grains, and unhealthy seed oils like soy or canola. Since we are wanting to avoid these ingredients on the GAPS Diet, we found a new family favorite recipe that is bursting with healthy fats, protein, flavor, probiotics, vitamins, and minerals. This recipe can also be used while following Whole30, WAPF, Keto, or another whole foods or lower carb diet.

GAPS Diet Egg Salad (Whole30, Keto, Paleo Friendly) Recipe

Creamy GAPS diet egg salad—easy, Whole30, keto, and Paleo-friendly! A quick, gut-healthy, protein-rich meal for any time of day.

Equipment

  • Mason jar
  • immersion blender
  • pyrex bowl

Ingredients
  

  • 12 pcs hard boiled eggs (peeled)
  • 1/2 cup homemade or store bought mayo (use more if needed to reach desired consistency)
  • 1 tbsp yellow mustard
  • 1 pcs sweet onion (finely chopped)
  • 2-4 stalks celery (finely chopped)
  • 1 cup chopped veggies (cucumber, cabbage, or sauerkraut, with juice drained)
  • 1-2 tbsp milk kefir (optional)
  • 2 tspn garlic powder (optional)
  • 1 tbsp fresh cilantro, dill, or parsley (optional)

Instructions
 

  • Remove egg whites from yolks and finely chop egg whites.

  • Mix egg yolks, mustard, mayo, herbs, and milk kefir (optional) together.

  • Combine chopped veggies and egg whites into the mayo mixture.
  • Serve by the spoonful, over salads, in a lettuce wrap, or any other desired way.

Notes

If you are making your mayo from scratch (here are the directions), you will need a mason jar and an immersion blender. Otherwise, use this store bought mayo, which has clean and healthy ingredients. Egg Salad Recipe Variations

We NEVER get sick of this recipe, as it can be made into countless variations with different flavors by varying the protein, veggies, herbs, and probiotic options. Here are a few of our favorites substitute options:

  • For protein variations, we sometimes use less hardboiled eggs and add chicken, salmon, or turkey.
  • For vegetable variations, we enjoy chopped cucumbers, green peppers, pickles, sauerkraut or chopped cabbage.
  • For herb variations, try parsley, cilantro, dill, garlic, or mustard seed.
  • For probiotic variations, substitute 1 tablespoon of mayo with 1 tablespoon of fermented carrot juice, fermented milk kefir, or sauerkraut juice.

All of our children enjoy these variations (even picky eaters!)
