Milk Kefir Artichoke Dip Recipe

Whip up a creamy milk kefir artichoke dip—probiotic-rich, gut-friendly, and perfect for GAPS, Paleo, or healthy snacking anytime!

Equipment

  • bowl
  • pyrex (or 9x13 pan)

Ingredients
  

  • 2 cups milk kefir (homemade)
  • 2 cups mayo (homemade - or chosen store brand)
  • 1 jar artichoke hearts (drained and chopped - check ingredients)
  • 1 cup green onions/scallions (chopped - or any favorite onion)
  • 1/4 cup parsley, dill, and cilantro (chopped fresh - or 1 tablespoon dried of each of these or any favorite seasonings)
  • 4 cloves garlic (fresh - minced or 1 tablespoon garlic powder)
  • salt (to taste)
  • pepper (to taste)

Instructions
 

  • Mix milk kefir and mayo in a bowl.
  • Add chopped artichoke hearts, onion, and herbs and mix well.
  • Pour into pyrex or 9x13 pan.
  • Enjoy with veggie sticks or chips (if not strict gaps).

Notes

  • If you are making your milk kefir and mayo from scratch (see directions here - milk kefir - mayo).
  • This is a clean brand of drained and chopped artichoke hearts.
  • For a thicker consistency, use milk kefir that has been "dripped", or the curd-like part separated from the whey. Alternately, play with the mayo to kefir ratio until it meets your favorite consistency.
  • Swap any favorite herbs and seasonings to add variations, such as red pepper flakes for a little kick.
  • For a chunkier recipe, our family loves to add shredded chicken, diced celery and cucumbers, or sprinkle in parmesan cheese (not strict gaps).
