Why Milk Kefir in Artichoke Dip?

When our family had to go dairy-free due to food allergies and Hashimoto’s thyroid disease, I really missed creamy dips and cheeses. This recipe was born out of an intense craving for a creamy dairy dip, that would not wreck havoc on our immune systems! Many people who cannot tolerate dairy products are able to consume homemade milk kefir, as it is lactose-free when properly fermented. For more information about milk kefir, including how you can easily make it in your own home, check out this post.

“Regular” Artichoke Spinach Dip vs Milk Kefir Artichoke Dip

Does this milk kefir artichoke spinach dip really taste as good as other recipes? Yes and no. I feel this recipe produces a slightly more tangy and a thinner consistency than other recipes we have tried. But oh so delicious. My husband loves artichoke spinach dip, and would even often buy it from a deli in between making it at home. He gave a two-thumbs up approval for this healthier homemade milk kefir version! He also mixed it with grass-fed ground beef to make a beef stroganoff- which also was DELICIOUS.

How to Make Milk Kefir Artichoke Spinach Dip?

The key to all good dips are the fat and the herbs/seasonings. A recipe is not complete in our home without butter and garlic, in most cases…ha! This recipe calls for a blend of fresh herbs, as we love to make this in the summertime! However, you can add or subtract any of your family’s favorite seasonings or use dried herbs as well.

TOOLS YOU MAY NEED:

We use pyrex containers and 9x13 freezable and oven-safe pans every single day. This is an important food SYSTEM we use to save time and reduce toxic exposures to plastic. For my full list of GAPS kitchen tool essentials that make mom's life easier, check out this post.

  • 2 cups homemade milk kefir
  • 2 cups homemade mayo or chosen store brand
  • 1 jar drained and chopped artichoke hearts- check ingredients
  • 1 cup chopped green onions/scallions OR any favorite onion
  • 1/4 cup chopped fresh parsley, dill, and cilantro OR 1 tablespoon dried of each of these OR any favorite seasonings
  • 4 cloves fresh garlic, minced OR 1 tablespoon garlic powder
  • salt and pepper to taste

Instructions

1. Mix milk kefir and mayo in a bowl.
2. Add chopped artichoke hearts, onion, and herbs and mix well.
3. Pour into pyrex or 9x13 pan.
4. Enjoy with veggie sticks or chips (if not strict gaps).

Notes

  • If you are making your milk kefir and mayo from scratch (see directions here - milk kefir - mayo).
  • This is a clean brand of drained and chopped artichoke hearts.
  • For a thicker consistency, use milk kefir that has been "dripped", or the curd-like part separated from the whey. Alternately, play with the mayo to kefir ratio until it meets your favorite consistency.
  • Swap any favorite herbs and seasonings to add variations, such as red pepper flakes for a little kick.
  • For a chunkier recipe, our family loves to add shredded chicken, diced celery and cucumbers, or sprinkle in parmesan cheese (not strict gaps).
