These healthy gluten & sugar free granola bars recipe makes a chewy, soft, and a perfect chocolatey dessert or breakfast bar. Using only honey for the sweetener, this gluten free treat comes together using just one pan to mix and bake- no extra dishes. Healthy Gluten & Sugar Free Granola Bars Recipe

These healthy gluten and sugar free granola bars are soft, chewy, and chocolatey. This easy to make recipe comes together in less than 30 minutes and is a quick and healthy breakfast or dessert idea.

Ingredients
  

  • 5 cups quick or old fashioned oats use gluten free, if desired
  • 16 ounces peanut butter I use natural with no sugar or seed oils added
  • 1 cup honey or real maple syrup
  • 1/2 cup butter or preferred fat/oil, such as coconut oil
  • 3 eggs
  • 1.5 cups chocolate chips or favorite mix ins
  • 1 tbsp real vanilla extract

Instructions
 

  • Melt together peanut butter, honey, and butter (or coconut oil for dairy free option) until mixed together. Do not overheat.
  • Remove from heat and mix in eggs and vanilla, then oats.
  • Fold in chocolate chips (or other preferred mix ins, such as raisins, nuts)
  • Pour granola batter into a greased or parchment paper lined 9×13 pan and bake until just golden brown, about 10-15 minutes. Do not overbake!
  • Remove from oven and allow pan to cool before cutting, or the granola will not hold its shape.
  • Store covered at room temperature for 2-3 days or in the fridge for 1 week.

  • In a cast iron skillet, mix together peanut butter, honey, and butter (or coconut oil for dairy-free option). If you are working with raw honey and natural peanut butter, heat the skillet on low heat to help soften and mix all ingredients together.
  • Remove cast iron from heat and mix in eggs and vanilla.
  • Add oats and mix until full incorporated, then mix in chocolate chips.
  • Smooth batter flat in greased or parchment paper lined 9×13 pan.
  • Bake batter in the cast iron pan at 350 degrees until golden brown, about 10-15 minutes. Do not overbake!
  • Allow granola to cool to room temperature before removing from pan so the cookie holds its form.
  • Cut into desired shapes (wedges, bars, etc.) and serve when cooled.
