How to Make Milk Kefir?

If you haven’t already started your batch of milk kefir at home, order yourself some kefir grains and get started as soon as they arrive in the mail! Making milk kefir at home is hands-down the easiest home ferment to make, and it has way larger amounts of probiotics and beneficial yeasts than any other fermented foods. What is GAPS Diet Cultured Cream?

Some call this kefir cream, sour cream, or crème fraiche. These are different names used to describe the same fermented cream product. Home-fermented dairy is much easier to digest than commercial dairy products and can often be consumed even by those with dairy sensitivities. Thus, it can be used as a substitute in recipes that call for cream, such as ice cream, dips- like this creamy artichoke dip, soups, lattes, smoothies, cake frosting, and desserts. Even those of us with lactose intolerance or dairy sensitivities can have our cream and eat it too! 😉

How to Make GAPS Diet Cultured Cream?

(Or kefir cream, crème fraiche, sour cream…)

  • Combine 1 quart of raw or organic, pasture-raised cream and 1/2 cup of milk kefir in a jar with an airtight lid
  • Shake the jar to combine
  • Allow the jar of cream to ferment at room temperature for 24 hours until thick and creamy

How to Make GAPS Diet Milk Kefir Ice Cream?

Investing in an ice cream maker has been a game-changer for our family doing the GAPS diet! (Especially young children). We have enjoyed so many yummy and healthy ice cream variations that can be whipped up in less than 30 minutes (including churn time) for a satisfying dessert.

Milk Kefir Ice Cream Recipe

GAPS Diet Milk Kefir Ice Cream

This GAPS diet milk kefir ice cream recipe yields an incredibly satiating lactose-free ice cream. With added egg yolks, this milk kefir ice cream is packed with healthy fats and is extra creamy.

Ingredients

  • 1 quart cultured kefir cream (it is ok to use your 1 quart + 1/2 cup if you followed the recipe on the post)
  • 3 teaspoons real vanilla extract
  • 1/2- 1/3 cup raw honey
  • 6 or more egg yolks from pasture-raised chickens

Instructions

1. Using an immersion blender, whip egg yolks until they emulsify (change form)- about 5-10 minutes.

2. Blend all ingredients with an immersion blender or a counter top blender until smooth.
3. Pour blended mixture into your ice cream maker (this one is amazing!).
4. Allow ice cream to churn for about 25 minutes or follow the instructions on your ice cream maker.
5. The more egg yolks added, the creamier the ice cream will be.
